Smoked Salmon Blackberry Salad

If ever there were a quick, fancy pants salad! Each time I’ve made this, I’ve had it for breakfast (and the kids split the other half). It’s light, flavorful, and satisfying all at once.

The smoked salmon I use is homesmoked. Don’t hate me. BUT you could also substitute a salmon that was grilled – even better if you grill it on a soaked wood plank, imparting some smoky flavor. You could also add smoked salt to the salmon as it’s grilling, or experiment with natural liquid smoke.

You could also use your favorite berry. Raspberries, blueberries, sliced strawberries… Finally, if you and balsamic vinegar don’t jive for whatever reason, feel free to use fresh lemon juice (and zest) instead. These flavors stand on their own.

Smoked salmon pulls together this simple salad that you can make on the fly.
  • 1 portion of smoked salmon, skin removed (enough to feed two people)
  • 4 handfuls of organic spring mix
  • ½ cup organic blackberries
  • 1 carrot, julliened
  • Balsamic vinegar, to dress
  • EVOO, to dress
  1. Slice smoked salmon into strips.
  2. Divide spring mix, smoked salmon, blackberries, and julienned carrot among two plates.
  3. Dress to your taste with balsamic and extra virgin olive oil. Serve immediately.
