Luv’s Lunches:

It’s helpful to think outside of the box when it comes to the lunch box. A healthy school lunch can be simple to assemble the night before or even the morning of, especially when using leftovers! And I used a LOT of leftovers this week.

Luv’s favorite lunch was day four, which also received some flak from her peers because of the greens. To which she replied, “mind your own plate” – yes, she got that from me. 😀

  • Day four: Leftover Mojo Style Pork Roast {recipe coming} with apple slices on baby kale. In the glass bottle is a mix of balsamic vinegar and olive oil to dress her salad. She liked that addition. 🙂
