After I made enough batches of the Cacao Coconut Macaroons, I felt confident enough in the recipe to experiment further.

Peppermint Cacao Coconut Macaroons

Sometimes just adding a little peppermint oil elevates flavors for a welcome change. Once again, The Mister {who still claims to dislike coconut} enjoyed macaroons. He especially liked the addition of peppermint.

Needless to say, these were as good as gone. *snicker*

Peppermint Cacao Coconut Macaroons

Cacao Coconut Macaroons

Serves: about 4 dozen
  1. Preheat oven to 325° F. Line a sheet pan with parchment paper.
  2. Heat the coconut butter, cacao powder, coffee, and maple syrup over medium heat. Stir often, until the mixture is smooth. Remove from heat and fold in shredded coconut, peppermint essential oil, and sea salt.
  3. Scoop up the macaroon mixture, using a #60 cookie scoop, packed tightly, but level. Release onto the sheet pan, using your fingers to help it keep it's shape if need be. Continue with the remaining macaroon mixture.
  4. Bake for 15-17 minutes before removing from the oven. Cool on a wire rack, if you can wait that long.

    They sound amazing! I love everything that goes into them–including cocounut!

      Thanks, Kathleen! These have become a favorite of mine. I was bummed to see that Tropical Traditions was out of the shredded coconut last time I placed an order so I had to pulse chips in the food processor to make due :D I thought ordering bi-weekly was enough until I started making these… I think I’ll have to up my par ;)
