Taking quick stock of our fruit selection, I chuckled. The 21-Day Sugar Detox puts a slight damper on possibilities! But I remembered how much I liked the mint and grapefruit combination in my Grapefruit Avocado Salad. And so, I had my inspiration!

She chose the molds instead of squares this time. I can see us collecting maybe too many of these little gummy molds… They’re just so fun! It’s a great gelatin packed little snack for Luv and Bugsy {yes, he loves these, too!}. And I love how quickly the gummies set up in these individual molds.

Mint Grapefruit Gummies

Mint Grapefruit Gummies

These Mint Grapefruit Gummies have just a touch of sweetness!
  • ⅔ cup fresh squeezed organic grapefruit juice, separated
  • 6 TB grassfed gelatin
  • 4 TB raw honey
  • 2 tsp dried organic mint
  1. In a small bowl, bloom the gelatin in ⅓ cup of the grapefruit juice.
  2. Whisk honey, mint, bloomed mixture, and remaining juice over medium-low heat in saucepan. Continue whisking until gelatin is completely dissolved. Pour into silicone mold(s) positioned on a sheet pan or in a glass baking dish to later cut into pieces.
  3. Refrigerate until set, about 15-20 minutes.
  4. Pop the gummies out or slice into squares. Store in a covered Mason jar in the fridge.
